Easy Dyes from Nature - 5/5/12

Learn to forage for dye plants, including weeds, vegetables, barks, berries, teas and spices. After gathering plants from the land, we’ll set up mordant baths for the fabric using alum, salt, iron nails or vinegar to “set” the color. You’ll create your own colorful scarf to bring home. In addition, students can bring their own natural fiber fabric or articles of clothing to dye (cotton, linen, silk, wool, or hemp). Taught by Caron Wenzel of Blazing Star Nursery.

Join us for a tour and introduction to Angelic Organics, the Biodynamic vegetable farm in northern Illinois featured in the award-winning documentary film The Real Dirt on Farmer John. We will explore what makes this a Biodynamic and community supported agriculture (CSA) farm. Learn basic strategies for growing food without chemical inputs and see the seasonal work underway at the farm. Wear sturdy shoes (conditions may be muddy!) and clothes appropriate for the weather.

Come join us for some mud work and learn to build with cob, a sustainable building material. The oven and benches were started in an earlier workshop; you'll get to learn the process from the ground up, but have the privilege of finishing the creation. Earth ovens are a great introduction to natural building, using age-old techniques and simple materials such as clay, sand, and straw. The emphasis will be on hands-on learning as we learn to mix cob and earthen plaster, and provide you with the skills to build an oven in your own backyard.

This hands-on class will cover the steps for making hard (not difficult, just firm-textured!) cheeses, including cooking curds, washing, cheddaring, pressing, salting, drying, aging, waxing and more. We’ll make two different kinds of cheese during the class, while learning variations for other hard cheeses as well. Bonus: We’ll mail you a half pound of your cheese after pressing, drying and salting stages are complete! Prerequisite: Cheesemaking class.

Families bring their tents and the kids to Angelic Organics for a three days of farm adventures. Winemaking - 7/14/12

After introducing the science of winemaking, we’ll jump right into making a small batch of wine. Each participant will use wild fruits to make one gallon of wine starter (or “must”) for fermenting at home. Participants need to bring 3-5 pounds of fruit (preferably wild fruits such as mulberries or raspberries); for help with identifying and selecting fruit please contact Dave at (608) 934-1070. We'll supply a bucket, a fermentation lock, and tubing; you'll need a gallon glass jug, some sugar, and wine bottles back at home.

Kids have an opportunity to learn exactly where their food comes from as they prepare and create side dishes and dessert for an evening meal. Tour the farm, learn how to recognize different veggies, and harvest just like our field crew does. Back at the barn, you will meet the livestock, collect eggs and milk a goat. Then, create a fanciful and nutritious meal, including deviled eggs, silly salad, and a tasty (and cold!) dessert. Kids age 6-12 can attend on their own, but younger children must be accompanied by a paying adult.

Make a fabulous lasagna totally from scratch! We’ll make homemade noodles with eggs you’ve gathered from the farm, cheese with milk from the goats, and sauce using vegetables from our community supported agriculture farm. Get ideas and tips for using seasonal vegetables, then, while the lasagna cooks, you’ll get to tour the farm to see the vegetables in the fields. The workshop will end by sharing a gourmet meal in our outdoor space.
